The Christmas Scone

This is just a rich scone with a little Christmas cheer. The story is that the Scone is meant to signify ” The Stone of Destiny ” where the former Kings of Scotland were crowned at Scone in Perthshire.

300g Self Raising Flour ( Sifted)
½ T/Spoon baking Powder
75g Cubed Butter
50g Caster Sugar
1 Egg
100ml Milk
50g Sweet Mincemeat Mix

Recipe for Mincemeat.

225g/8oz vegetarian suet
225g/8oz Bramley apples, peeled, cored and chopped
125g/4oz candied peel, chopped
225g/8oz sultanas
225g/8oz raisins
225g/8oz currants
175g/6oz demerara sugar
1 tsp mixed spice
1 orange, zest and juice
60ml/2fl oz brandy

Method
Pre-Heat the oven to 200 C
In a large bowl add the flour, sugar , baking powder and cubed butter, rub through your fingers till crumbly. In another bowl break the egg and beat then add the milk and mix well. Make a hole in the flour and slowly add your milk mix mixing with your hands till a soft dough is achieved, mix in the sultanas, allow to rest for 10 minutes. Now roll out onto a floured surface and cut out your shapes, place on a tray with baking parchment and bake in the oven for 15 – 20 minutes. Remove from the oven and place on a cooling wire, allow to cool slightly. Serve with butter and whipped cream.

As an alternative to a bakewell tart replace the jam with some of the mincemeat mix.

Marinades for Chicken

Piri-Piri

2 tablespoons grated fresh lemon rind

3 tablespoons lemon juice

10 cloves garlic, minced

1 teaspoon smoked paprika

2 tablespoons olive oil

2 finely chopped red chillies

1/2 teaspoon salt

 

BBQ Sauce

1 cup ketchup

1/4 cup water

1/4 cup vinegar

1/4 cup brown sugar

3 tablespoons olive oil

2 tablespoons paprika

1 tablespoon chili powder

2 cloves garlic, minced

1 teaspoon cayenne

 

Curry Marinade

1 Tbsp oil

1 onion chopped

1 Tbsp grated ginger

1 Large garlic clove, crushed

3 tsp cumin seeds

6 tomatoes (peeled, seeded and chopped)

1 Tbsp tomato paste

1 tsp sugar

½ cup yoghurt

1 tsp curry powder (Mild)

2 tsp garam masala

½ cup chopped fresh coriander

 

Thai Chicken Marinade

2 sticks of lemon grass, finely chopped

Juice of 2 limes

2 red chillies, chopped

3 garlic cloves, crushed

2.5 cm/ 1 inch piece of fresh root ginger, finely chopped

2 tablespoons soft dark brown sugar

2 tablesoons chopped fresh coriander

150 ml/ quarter pint coconut milk

 

Honey & Orange Marinade

2.5cm/ 1 inch piece of fresh root ginger, peeled and very finely grated

2 garlic cloves, crushed

Finely grated rind and juice of 1 orange

2 tablespoons olive oil

2 tablespoons honey

All the recipes follow the same process, add all the prepared ingredients to a food processor and blitz till smooth. Use meat that is still on the bone for more flavour, it also stops excess shrinkage.

Turmeric infused Pont Neuf potatoes, a twist on a classic potato dish. Pont Neuf translates as 9 Bridges, so we are talking big chunky “Chips” Take some Maris Piper potatoes and peel then cut into 12cm long and 2cm square, use the remaining trimmings for mashed potatoes. In a saucepan add enough water to cover the potatoes with a heaped teaspoon of turmeric and a vegetable stockcube, bring to the boil and cook for 3 minutes. drain well and lay on a tray to cool. When they are cool heat a fryer to 180 Degrees Celcius , lay the chips in the basket and place into the fryer, cook for 2-3 minutes till crispy, remove onto kitchen paper, season with a little sea salt and serve with a curried mayonnaise
