Turmeric infused Pont Neuf potatoes, a twist on a classic potato dish. Pont Neuf translates as 9 Bridges, so we are talking big chunky “Chips” Take some Maris Piper potatoes and peel then cut into 12cm long and 2cm square, use the remaining trimmings for mashed potatoes. In a saucepan add enough water to cover the potatoes with a heaped teaspoon of turmeric and a vegetable stockcube, bring to the boil and cook for 3 minutes. drain well and lay on a tray to cool. When they are cool heat a fryer to 180 Degrees Celcius , lay the chips in the basket and place into the fryer, cook for 3-4 minutes till crispy, remove onto kitchen paper, season with a little sea salt and serve with a curried mayonnaise.
