I do enjoy a good Dressing with either a salad of mixed leaves or roasted vegetables ( both is even better).
Both recipes will make enough for a whole summer and a little of the autumn.
Balsamic Dressing ( Syrup):-
500ml balsamic vinegar ( cheap and basic type)
250ml red wine vinegar
300g caster sugar
2 cloves of crushed garlic
1/4 tsp crushed pepper
250ml sunflower/rapeseed oil
Add all the ingredients to a large saucepan except the oil and bring to a slow boil, reduce the heat and allow to simmer and reduce by 1/3. Remove from the heat and allow to cool, add the oil and blend with a hand stick, pass through a fine sieve. Voila & Bon Appetite
Sweet Red Pepper Dressing:-
4 red peppers, roughly chopped and seeds removed.
2 red chillies, top removed and chopped, keep the seeds.
1 large tbsp tomato paste
500ml red wine vinegar
250g caster sugar
Add all the ingredients to a saucepan and bring to the boil, reduce to a simmer and cook for 45mins, remove from the heat, allow to cool and liquidise, whilst liquidising add 150ml olive oil. Enjoy.
